Unohana (Sauteed Okara)

Okara is a left after making soy milk.
But it is a nutritious food.
Okara is also known as excellent diet food.
Because it is low in fat and rich in fiber.

We usually stir-fry okara in a pan without oil, and take out okara from the pan.
Heat a little of salada oil in the pan.
Stir-fry some vegetables and other ingredients such as carrot, shiitake-mushroom, spinatch, green beans, aburaage , konnyaku and sakuraebi(small dried shrimp) in the pan.
Add okara(stir-fried), soy sauce, sake, mirin, sugar, dashi-soup to the pan.
And simmer them with stirring until liquid is gone.

We usually have it as side dish.

Kinpira

kinpira Kinpira is a type of Japanese dish which is made by sauteing and simmering shreded vegetables.
Usually main ingredients are root vegetables such as burdock, carrot, lotus root.
Seasonings are mirin and soy sauce. some time add red pepper and sesame seed.

It has mildly sweet taste.
It is typicaly home dish and it is often appear in ingredient of bento.

Yasai Itame (Sauteed vegetable)

yasai itameYasai itame is a reasonable and helthy dish.
It is populay home made dish which is made by sauteeing various vagetables and a few meat.
Especially it is good for the familly who have little children.
I remenber I often had it, when I was child.

( Typical ingredients )

pork ( sometime ham or fish sausage insted of pork)
carrot
onion
cabbage
soy bean sprout
green pepper
mush room

soy sauce ( sometime, worcester sauce insted of soy sauce )
salt
pepper
salad oil
